I'll let you know how things turn out. I pulled a sample before I added the nibs and it tasted pretty good so we'll see what the nibs add to it. I plan on bottling later this week.

Well, I went ahead and roasted them at 170 for five minutes, turned the oven off and left them in for another 10 minutes. They smell amazing!!! So much more chocolate aroma than not being roasted....

Cacao nibs-do I need to bake?

I got a 4 oz pack of cacao nibs from morebeer.com, it doesn't say if they've been roasted. Do I or should I roast them in the oven before I add them to my choc stout? My stout has reached FG.
