How much do you like vanilla? I did 2 beans in a 5 gallon batch and, to be honest, it was too much vanilla for me. Also, 12 oz for the Carafa III seems a little high, unless you want malty flavor...

Everyone's system is a little different in how fast you boil off. I'm on a gas stovetop and only boil off about 0.5 gallons in an hour. Big setups outdoors with high output burners will burn off...

No idea on growing hops, but I can say that there is a nice intermediate with the barley growing: buy bulk 2-row grain. It keeps pretty well; just keep it dry
