I would say even a good extract like the Caribou Slobber from Northern Brewer would be a great start. My wife (that really does not like beer) loves this stuff. It is quite tasty!

It is not a bad thing if your CO2 is escaping around your lid...the release of CO2 will stop anything from getting in. I am not familiar with your yeast...yeasts have preferred temps that they work...
