I just put 4 holes in the nylon bag and "thread" the bag over them. On my 10th brew with first bag works great.

On the first question, i would go with just one switch, there is no reason for two, mine is up for fwd and down for reverse. (IMO)

You do nice work so it might look better if you make a wood box...
