2 oz medium oak cubes is more than enough for only 2 gallons. You'll only need 1 oz or less. Make sure to taste it often after a week or two so you don't over oak. Or, boil the cubes then soak in...

Unfortunately wlp677 is capable of producing alcohol and will eat through all the sugar. I had the same thought when I used it, only to find out it's more than capable of fermenting the entire thing...
