Been hearing a bunch of pro's who do rest at 145 and then 15 min at say 155-160. I mash in a cooler so while I can do steps, it's not that easy. I was wondering if some of the benefit of the alpha...

+1. I use a 5g. If its any higher than say 1.065, I just bump up OG with extract and/or sugar. Nice thing is the cooler is always full to the brim which means temps hold rock steady.

Since it looks like you can step your mash I would consider doing 75 at 145 then 15 at 158 after your 122 rest. Really dry that thing out.

Obviously it goes without saying that this is your beer. But I think that 65 IBU and 2oz of dry hop is going to leave you underwhelmed. And while understated works for many styles, I don't think IIPA...

I would guess that this isn't anywhere near enough hops. Not enough IBU's and not enough late additions. Take a look at Vinnie's IIPA recipe. What's your dry hop plan?
