Since you just degassed it there isnt a lot of CO2 to protect it. Might be a better idea to rack it into a carboy or 2, put on an airlock and let it settle out and rack again in a few weeks after it...

As far as I know the only real cider is made from apples. I know they sell peach cider or cherry cider, if its unfermented its just peach or cherry juice, not really cider, its just a marketing ploy...

Stop freakin. Your wine is full of CO2 right now so you have time to get a 5 gal carboy, you need more carboys anyway. Just keep the airlock on your carboy. You can also of course add more Welches....
