I finish nearly all my Ambers with Saaz, the flavour and aroma just go so nicely with C-hops. The exception was my next-to-most-recent which was Centennial-only since I couldn't get Cascade or Saaz....

Normally only two pints, and generally only Fri/Sat/Sun, though occasionally 3-4 on a nice Saturday in the yard. Don't often drink anything during the week. You guys are lushes, LOL!

Since all the conversion was done in the first hour (or less) I'd say you're good to go.

Yep, temps will tell the tale. If you can ferment in the high 50s or low 60s go with 1007. Have you looked into other yeasts?

Wyeast 1007 works great for this beer, too, I've use both S-05 and 1007 and prefer the latter. Finishes a bit less dry if you prefer a more malt-forward beer.
