That depends on the level of attenuation that you get and the grain bill but assuming 75% attenuation 8 points should get you 0.5-0.7 percentage points further.

5 gallon batches? If so then you're not doing a full boil which I would recommend with partial mashes. Adding water will dilute your og. So you want to start with a pre-boil volume and boil down...
