Also, the recipe may have called for a fermentation time of 6 weeks because a true Marzen is a lager and they take much longer than ales. Now that you have an ale yeast, it will go much faster. ...

The fermentation is done when your gravity drops to the desired/planned level. You cant just go by time in days. Check your gravity and see where you sit.

Sounds like a great recipe. I would definitely dry hop if able. Cascades are great if you want a nice grapefruity aroma, at least that's what I like. Why not bump up all the hop additions to .5 oz?
