I always have a beer during brewing, but I wait until things are rolling well enough.
Then again, personally I don't drink to get drunk, I usually only have 2-3 beers at most.

Personally I like to sample one after 1 week fridge time, another after 2 weeks fridge time, and then start in officially after 3 weeks.
I enjoy tasting the profile change over 1-3 weeks.
