I don't think the yeast is the problem. I've dry sprinkled one packet of 05 on 1.075 beers before without an issue.

What did you re-hydrate with, and why at 90'?

What yeast did he use, and was he able to control that (low) fermentation temperature? I'd be honest. If you tell him you like it, he will only give you more.
