Stone uses 1lb per bbl of dry hops each of Nelson and Galaxy. That's roughly 3oz ea.

I've used WLP090 for an enjoy by clone. 1.081 beer. Finished at 1.010 with 1lb of dextrose and zero crystal malt.

I don't think it'll get a 1.089-1.090 beer down to 1.010 with similar malt %'s....
