My brother and I started with a really nice pot from a restaurant supply, but it's probably 12 qt. We now use the $12 Big Lots one, it was cheap as anything, but oh so much better than the nice pot...

I put a weldless valve on my little brew pot. Using all the resources of my dorm room, it was a pita to get on, but haven't had a problem with it since.

I've noticed similar things before. I had a couple (extract) batches like that. After another couple weeks, they all evened off, I chalked it up to small variances in contents.

I believe there is software available, but I would just do 5 gallons, unless you are very limited on space. I have never had a problem getting rid of beer, even some of my early ones:O
