i would say your pretty safe then if it doesn't taste real good let it sit for 3 months and sample one if not let it sit again and sample after 6 months.

it wont make you go blind unless you drink...

On the bright side, after this batch which is less sweet than AO my wife thinks its to sweet but she still likes it way better. Maybe I'm short on acid and its not balancing the sweet, either way...

I overlooked that, my recipe is using malic and i think it tastes better which is a personal preference and its deffinatly to sweet so the choice of acid is important, I think I'll add some more...

that is the range i aim for as well, it depends on if your used to sweet or dry, i prefer dry so semi sweet is pretty sweet for me.
