Didnt alot of oldtimers use bread yeast? Not the most drinkable, but what was available.

im using 1-2 ounces of peat smoked malt. ive used 3-4 oz in the past & it was overwhelming. I was planning on mashing low, probably 150 as well.

think im going for 001.

Have you tried honey malt? Not sure if its appropriate in Belgians but it does give you a strong shot of honey flavor with just 8oz in a 5gal batch.
