My guess is the Northeast Abbey is Ommegang. Picked up Lochristi, Saison Brett, and Funktown. With those and the ECY that was released today I have lots of brewing ahead of me!

Big tripel went from 1.090 to 1.001...11.8% ABV. Going to age it for another month or so before kegging it. Tastes really damn good.

I'm about to have to do the same thing at the end...

I'm about to have to do the same thing at the end of January. My plan was to transfer to kegs, purge with co2, seal it up, and then pop one of those airlock lids on after they reach their new home....

To each his own! I would urge you to try Wunderkind again if you have the chance.

The strain they use is not 3711, Jeff has said they use a strain from BSI isolated from a French Saison producer....

Nope, just did a single infusion at 154. I should note it was malted wheat, rye, and oats. The spelt was flaked. Not really worried about clarity on a beer like this. Also, just used domestic 2-row.
