I have two pale sour beers which have been fermenting with ECY20 for 15 and 16 months. The oldest is a mix of pils and wheat extract with 8 oz. of maltodextrin. It started at 1.049. The younger...

If you remember to update this post in a few years, please do! I use better bottles, and they've been good up to 1.5 years for me. I've only gone longer than that in glass.

I never brewed mine. I still have the recipe waiting, but I decided to wait on brewing it in favor of making something lower in alcohol. I ended up doing 50% pale malt and 50% wheat malt with...

I've never used them, but I've been thinking about it. I want to try a beer where I do a semi-spontaneous fermentation--leave the carboy or bucket open in the kitchen for a few hours to collect...

I bottled up my dubbel this week, and there were no hints of sour, which I was happy about. I have enough sour beers going, and want to have a few non-sour Belgian-style beers going.

Tonight...

I've never done this, personally, but I don't see a problem. Much of the flavor from bourbon is already coming from the oak it was aged in. I really like the extra flavor and mouthfeel that...

Well, I figured out why noone has experience with this stuff. I misread the product page, thinking that 3/8" was 3/16". The smallest it comes in is 1/4", and it only has a resistance of .03 PSI/ft....

Thanks for the feedback.

I did read the older information in this thread about contaminated yeast samples. I definitely hope I don't have that problem. I brewed what is on track to be my best...

Reviving this old thread. I got some ECY09 in the mail last week. I'm thinking a dubbel-like grain bill that'll be about 5% ABV and a dark strong or quad. I'm a fan of dubbels, so I'm excited to...

This describes the flavor of my beer pretty well. There's a slight ashy finish, but not a lot of contribution from the dark malts, otherwise.

I wonder I'm just conditioned to expect lots of...

I was hoping to have more of the chocolate flavor come through than I did. My base beer was an oatmeal stout, leaning more towards crystal and chocolate that roast. I used 2.5% roasted barley, 7%...

Sour stout experiences

A couple of years ago I had a sour stout at a brew fest and I really liked it. The mixture of sour and roast was surprising and awesome. This was at a sour beer festival, and I had it at the end of...

I've used it for a few beers recently. The first was a dark mild. It turned out very much like a low-alcohol nut brown. I fermented at 67. The mild had a unique aroma. I do get malt from it, and...
