I've emailed Avery in the past about some help cloning one of their beers, and they were very kind and helpful and gave me pretty much the whole recipe. So I'd say that's your best shot!

A hefeweizen can be done in a short amount of time, with just one or two grains, one hop varietal and yeast. Simple stuff.

There's not a direct correlation, as you can get high efficiency without extracting tannins, but yes, that certainly can be a big side-effect of the race for higher and higher efficiency if not done...
