I wouldn't put the probe in a water bottle - it isn't water proof.

What most people normally do is tape the probe to the outside of a keg with some sort of insulator around the probe.

Just an fyi - I had an extra bottle of ZK and I let it go still and took a gravity reading which was 1.030.
