I wouldn't include the oxygen absorber. Our chemist has reason to believe some will absorb the oils and aroma's from the hops, as well. Just purge with nitrogen or CO2 like others have mentioned.

Now with regard to what weight to stop drying. If you were one a small scale commercial grower, I would insist you do a moisture content analysis...but that takes about 1/3 gallon of hops to do...

The oils and aromas are some of the last things to develop. Give it time or you'll end up harvesting too early.

Also first year don't develop as much.
