I moved all my hops this spring and set them up...

Yeah, holes in the leaves near ground level are almost certainly slugs. If you go out first thing in the morning, you can just pick them off and dispose of them. The pill bugs are benign.

I'd keep the can out of the wort, too. Aren't cans lined with BPA (the stuff they're NOT putting in water bottles anymore), which gets released when heated?

Same pressure. The amount of head space doesn't matter. You'll use a greater volume of CO2 to get the same pressure in a bigger head space, but your regulator takes care of that for you.
