I would put it in the fridge and let it settle and see how much yeast lays on the bottom I would guess it turns out just fine.

I have never tried sanitizing my cutting boards...

I have never tried sanitizing my cutting boards or counter tops but I see no reason it wouldnt work. But my wife sprays down the tiles in the shower to keep the mold down and that seems to work.

Yes our water is softer than most of the country but im not so sure about hard water being better for brewing im sure there are those who will debate that, all I know is NYC water tastes very good...

I use Notty on 90% of my brews I love it rewash it all the time I brew mostly IPA and PA its my favorite yeast.
