I batch sparge. Tried with and without and didn't see the point of doing it. The first sparge addition is normally hot enough to raise the temp of the grain bed.

Well, I only got to sample a few local beers while I was there. The one that I found interesting was the Gaelic Ale from Highland brewing.

It will be fine. I toss pellet hops right in the boil without a bag. Much of it settles out when you chill and whirlpool and most of the rest ends up in the trub.

I usually scale my AG batches...

Well, you're still going to need a base malt. Depends on what you're trying to brew, but then use some darker crystal/ roasted malts.
