Well, if you're only doing one step for this starter you started it plenty early. Which isn't a bad thing, it's better than cutting things too close. I usually allow 24 hours to ferment the starter...

When they get ripe, crush a few cones in your hands and smell them. Next time you go the LHBS sniff around and see if you can narrow it down. It's almost impossible to tell by sight only.

A 1 liter starter means a 1 liter starter. And yes you would need a larger vessel. A good rule of thumb is to use a vessel twice as big as the starter you plan to make.
