Pretty close to RO water but will have less dissolved solids (more pure). It ok to use in brewing if you build up the water with salt/mineral additions as you would with RO.

I would have a hard time calling that crushed. Maybe send the pics to the online store and see if they can make it right. Best thing to get next would be a mill so you can control the crush.

What was the OG of each brew? Anything over 1.050 needs a starter or multiple packs its even more important when older yeast is used. Not sure what you need to research when it comes to yeast...
