Was drinking a 2 year old sparkling mead, made with Windsor ale yeast. Tasted better than a gluten-free beer and had about the same amount of carbonation as a regular beer.

Yes, you get a sharper spicy flavor from the ginger versus just dicing or slicing the ginger. The downside is that if you want your mead clear, you maybe waiting a while.

From what I read on Gambel Oak, it should impart a nice flavor, I little different from white oak, but much better than trying to use red oak. I don't know if the wood has properties of the fruit...

Depending on the Scottish Ale yeast you maybe ok. I used Edinburgh Ale yeast and while I maxed out at 14% it was not too sweet but it was very much a sparkling mead.

Never planned on boiling my honey, and like I said, I only planned on bringing the the sap up to pasteurization temperature. I'll let the thread know how it goes.
