When beer is carbonated it adds carbonic acid taste and bubbles of course so a beer that had been chilled and carbonated will taste completely different than pre bottle. Just give it time

Recently i just made a cream ale that i wanted to have good malty flavor. So i mashed at 158, used quite a bit of munich, and vienna malt, and used Northwest ale yeast.

I ended up at 82%...

Exactly what I would have said if I wasn't being lazy haha. Except I think you can mash all the way up to about 170 without running into too many problems. I've mashed a few beers beginning at 162....
