I have had good luck using Jolly Pumpkin dregs...

I have had good luck using Jolly Pumpkin dregs for souring. About 2-3 months to hit a stable gravity after addition.

Totally agree with above posters. Get some mileage out of it first before dedicating it to souring. Alternatively you can get a used barrel which would probably need less non soured brews through it...

Any of those combos with either hops will work really well with MO, 2 row and hell even vienna if your feeling up for a different variety. I don't know about the magnum though haven't experimented...

Sure its not the yeast you used? I brew exclusively smash saisons with Belgian pils and use striss as my hops. Peppercorn wouldn't be a flavor I would associate it with.

Ah I see. Which kind of extract did you use as different extracts have different amounts of fermentable sugars. The less you got the higher the final gravity.
