Judging from the color and the way it sits on the surface I'd say thats not a good yeast. Its probably a great mold. Not something you should probably brew with.

Should I add a tiny bit of new yeast in each bottle or will whats still in suspension, if its there, be enough to once I rack it off the old yeast and bottle it?

The concentrate is already sterile as far as we are concerned. Its clean enough to eat. It is fine to add just the way it is. Just make sure all your utensils and containers are sanitized.

If you added peptic enzyme it will. If not add 1 teaspoon per gallon dissolved in a little juice. It will take longer but it should clear.

Mathematical you use 13 FL oz of Treetop concentrate to 5 gallons. So you need 6.5 FL oz for 2.5 gallons. It is not the same as 5 oz per 5 gallons.

Don't keep an eye on it. Put it away and forget it for 4 months. Then take a reading. It will be done, clear and ready to bottle at that point.

Ok, Ive got to disagree about 16 oz concentrate to bottle carb. Thats too much. 13 oz concentrate is almost the same amount of fermentables as 5 oz (by weight) of corn sugar for 5 gallons of cider....

Bottle and let it sit 3 weeks minimum. Put one bottle away for 6 months. Drink the rest and in 6 months when you open the one bottle you can kick yourself for not waiting longer with all of it.

So its clear when you pour it.

Also its a way to be sure that the fermentation is done and the yeast has had enough time to clean things up. (Yes I know thats what a hydrometer is for :) )
