All has to do with time. The longer something sits in your brewery taking up space, the more it will cost to justify not making other beer with that space.

Oxygenation is usually described as wet cardboard, not solvent.

Try a different sanitizer? I use iodophor and have only had issues once when I didn't follow the directions.

You could use the plums to sour if they are fresh and uncleaned. They'll be teeming with microorganisms and you could get a nice wild fermentation going.

The math makes sense but the extract addition will probably be overpowering. One drop in 2 oz and you'll probably only taste the flavor you're adding. Maybe try this experiment on a commercial beer...

Same reason people prefer bmc over craft. Just because you didn't like it doesn't mean it was bad. I liked it. It was overpriced and I wouldnt buy It again for that reason but its an excellent sour.

It's wort caramelization. It causes it to get darker from heating it. Not too much you can do about it. You need a good vigorous boil to get rid of dms and have good hop utilization.

And I too support the use of RO water and building your mineral profile from scratch. It's easier to control and cheap. I pay like $0.30 a gallon at my local whole foods for it.
