I agree with Dubo, I have had plenty of sours and can't remember many with lingering head. Even in highly carbed sours the head dissipates fairly quickly.

+1 to that. My wife will take the thinner pieces and use them for other stuff but the larger pieces get rubbed and thrown on the smoker with the ribs. My wife loves those pieces.

I used to use the no stinking beer gun now I actually have a beer gun and it works great. Either way works the gun costs more but has the co2 purge which is nice but not totally necessary.
