Remember if you're letting your wort sit all day to cool, you're going to get more bitterness from your hops than you'd normally expect. There is info on this in the No Chill Brewing threads.

Yeah I should have been clearer. The ceramic bulbs are literally made of ceramic. They emit no light, just get warm. The infrared lights are ok because it's the UV light that messes with your beers....

I would think the more forgiving beers are going to be beers with a strong flavor like IPAs (hops cover imperfections) or stouts (lots of roast grains). Unfortunately they are also tricky for newbies...

Either Windsor or S-04 will be fine. I actually think the English ale qualities of those yeasts will work well with Green Line, as it's supposed to have biscuit, toasty flavors.

Hop forward means the dominant flavor is hops, malt forward means the dominant flavor is the malt. Hops add bitterness, and pine, grass, herbs, floral, and citrus flavors depending on the style/use....

Dry hopping gives you the aroma of the hops but not bitterness. If the beers you like are very bitter, you need to add more hops at the very beginning of your boil, not during dry hopping.
