Another question: It came with a 5lb CO2...

Another question:

It came with a 5lb CO2 tank, which still seems to have CO2 in it. While it has a regulator (it shows PSI), i have no idea how much is in there.

What's a safe way to bleed out...

Ok, so, after bottling, i let it condition in the bottle for 2 weeks.

On sampling the first bottle, i got some definate tannins...kinda like a Merlot, heh. Another 2 weeks really smoothed it out....

Plans for the Spring season?

My goal for this "Season" is consistency. I've yet to brew the same thing twice, always trying for new and interested recipes.

Now, i've formulated a nice, easy, low gravity session British style...
