Do you take hydrometer readings for specific gravity? Also, do you use a carbon filter or buy spring water? Chlorine is nasty, but less so in an IPA because of masking of the hops.

Yea 48 quart is probably ideal. That's 12 gallon, shouldn't have any problem with big beers and won't lose too much heat with a lot of headspace.

Dry hop with whatever hop you like. I like Centennial, so i use that a lot as a DH.
