I used 1/4 cup for 4 gallons of the burdock. If you haven't smelled the dried root you should. It's a very different aroma but I like it alot. Gum arabic is used for body and mouthfeel.

Typical ingredients in root beer are anise, burdock, ginger, juniper berries sarsaparilla, sassafras, vanilla, and wintergreen....

Well I never got around to commenting but that recipe was quite nice. The ginger was a good compliment and the beer went too fast! The Cuvee yeast produced zero off flavors so it's now my go to yeast.

I'll let you know how it turns out. Burdock is a strange flavor. I didn't expect it when simmering but we'll see. It's been a British staple for at least a century or two.

I would think the primary ferment at room temps in bottles might produce some good flavors to contribute to the fruit soda category. Thoughts? Not withstanding the cost of the yeast.
