I would simply use 1oz amarillo at 60min, 15min, 5min then dry hop the last oz. That might push around 40-45ibu if you don't consider that too bitter?

Yeh i've only got an ounce of simcoe left for dry hop and hops generally have to be mail ordered in batches of 4oz where i come from so i will see. I'd like a couple oz extra of amarillo or cascade...

What temperature is it in your keezer? It sounds like it might be too cold for natural carbonation which occurs at ale fermenting temps. Room temperature is good.

I can only get my hands on magnum and cascade. According to the sierra Nevada website magnum are used as finishing hops along with crystal and citra. You're probably right though to just use cascade...

I would save the nice cascade hops and possibly Willamette hops for later in the boil. Use a hop with a higher alpha acid like magnum for your 60min bittering addition.
