I wouldn't be drinking it that young... It is sometimes referred to as green beer when it's that young. A good amount the yeast will still be alive and active in the beer and if you drink live yeast...

IMHO dry hopping using plugs is the way to fly but i guess there is no reason you cant use pellets. Just do it after you have racked !
