Thanks! I was just doing a little research and found this Bochet recipe. I think I'd also rather go for a golden brown or dark brown color. I'm tossing around the idea of making beer clones using...

Caramelized Honey

I just had the idea of caramelizing my honey before making mead, in order to give it some nutty/toasty notes. Anyone know of any obvious cons to this method, before I try it?

The only preservatives that you have to look out...

The only preservatives that you have to look out for, as far as I know, are Sodium Benzoate and Potassium Metabisulfite. If neither of these is explicitly listed in the ingredients, you're good to...

Here's a good one I made recently:

Building recipes

I'm not even sure how to word this question, but is there a standard way to predict how much grain is required for a specific ABV? For example, if I knew I wanted to brew a beer that was 8% ABV but I...

Storage of excess grain/hops

I'm sure this has probably been discussed already, but I couldn't find it online. What's the best way to store leftover ingredients? I'm planning some one-to-two-gallon AG brewing recipes and I know...

Oh okay thanks guys. Maybe I'll go ahead and rack it a little sooner than planned then. I over-oaked a batch of mead a long time ago, and it wasn't pretty. I ended up just using it to top off other...

Prolonged lees contact

I'm having somewhat of a time/space issue with my brew, and was just wondering how long is reasonable to leave a batch on the lees? It cleared up about two weeks ago, so I added some oak chips and...

Small-batch all-grain brewing

I'm familiar with the fermentation process from my adventures with mead/wine, and I'd like to get into all-grain beer brewing. I'm planning to make a small batch (2 gallons) on my stovetop, and I...
