Try a 90 degree elbow on the inside. As long as you have space to attach it you should be able to get all but the last pint or so. Hose barb elbows also work pretty well

Yes, stable gravity will be unchanging with a refractometer as well. The measurement will always be incorrect once alcohol is present though.
