Temp control is the biggie. Yeast propagation would be my next one. With aeration rounding out my top three. If you can master yeast then you can make better beer.

If you are making the same beer for the second or third time then it should smell similar each time. Usually I look for more quantitative measures though. How fast the specific gravity drops and lag...

If it seems undercarbonated and tastes too sweet then I would suspect the yeast aren't done with the carbing sugar yet.

Make up a wheat IPA. If you need more fermentables you can add some honey or make some invert sugar. This will help dry out the beer too. Just don't go over 15% of your total gravity.

Depends on the beer. If it is hard to get/make or pricey then it becomes a special treat. If it is easy to find/make and pretty cheap then it is just a common drink. I would never try to make DFH 120...

I like sours and my wife doesn't. It really does boil down to a taste thing. Personally I would recommend La Folie from New Belgium's lips of faith series. The duchesse is also a decent sour though...

You can control the final gravity of extract beers by adding corn sugar. The alcohol lowers the final gravity. Add it as primary fermentation slows down though. Any other simple sugar can be used as...

I would uncap all the beers and put foil with rubberbands on the tops. Let that sugar ferment fully out for a few weeks and then use priming tabs and recap. It will be the easiest solution with only...
