I work in an industrial lab and all the stainless vessels that are jacketed use steam. I'm not saying that it can't be done, but building the jacket would definitely be a challenge

I concur with taking that tube out of your braid. I run my mashes at 1.25 and have no problems with my braid. The only stuck sparge I've ever had was with my pumpkin ale, but that's another story!
