You are generally looking for 0.3-0.5% total acid, and a pH of around 3.2-3.8

I've never been to any of those countries, but none are exactly known for their beer. I'd honestly stick to Wine and local specialty alcohols. Ouzo in Greece, Limoncello and Grapa in Italy etc
