I was there when they had a bunch of Cantillon available. To date Iris at REAL is the most expensive single beer I've purchased, but well worth it - luckily per diem is good in Honolulu.

Using keezer to control fermentation / casked beer chamber?

Are there any problems with putting in a duct from your keezer (set at ~1F) into a fermentation and/or casked ale chamber? My thought is to set up the keezer with a duct to an insulated secondary...

Scarcity definitely helps, but it's a really excellent beer. It's been a while since I had Rochefort 10, but the complex middle fruit flavors (grape, plum) in Westvleteren 12 are really amazing....

If it's boiled, it's clean. The lactobacillus are still in the beer, but they're dead and will drop out.

I don't know about better or worse, but the sour mash/wort is pretty darned fast. 3-4 days...
