Do you need to do anything to prevent the soda from getting infected in the keg? I want to dispense soda, but I'm worried that it'll get infected since it's just sugar water.

Well, I brewed this recipe yesterday. The hops still have a strong citrus/mango scent. I tasted the wort and it tastes great! I used WLP002 because my local brewshop doesn't have S-04.

Seedling mats work great. Mats don't get too hot either. Just place your carboy on top of it and wrap the carboy in a blanket to keep the heat in.

How does a no chill method affect your aroma/flavor hop additions? I would think all the volatile oils would dissipate.
Do you use a glass carboy? Are you worried it will crack from the heat?
