I have had excellent results building starters...

I have had excellent results building starters from a bottle of Dupont.

1.056 to 1.001. Ferment cool (70-ish) at first, ramping to 80+ over a week.

It takes a bit longer on my system to carb, too. For soda, I do use the shake method (30PSI, shake like hell for about 5 minutes, place in kegerator, set at 18psi). I also run longer lines for soda...

And, yes, if the ginger is in the right amount, you do not get that 7-UP taste at all. It just makes it more complex.

Maybe he's not worth saving? Ton's of great west coast beers are not hoppy - he needs to pick a style that better serves his taste. Stay away from Pales or IPA's and he should be fine.

Onion isn't typically DMS...

Hiding an aroma like that isn't really easy. In fact, it rarely works. Off flavors and aromas are just what they are. Isolate the issue and don't repeat!
