I prefer 001 over all and it's my house yeast. But, I'd actually rather 05 over 1056.
But I do agree, 001 is better at the lower temps that I like to ferment.

I definitely let the fermenter sit a day or so before kegging but the inside arm is still mostly covered with yeast.
I'm very pleased with this fermenter and think my beers taste better in this...
