In my personal experience this has been the case. Also I would say that the sour note is more intense in later generations. This is all personal experience though so your mileage may vary.

I'd stay away from that for mashing for 2 reasons. The first being the amount of head space you'll have when you mash is going to make temp control a nightmare. Second from what you are describing it...

Of course it is. Just wanting to know what to expect other than some added acid and dryness. However everything I've read so far leads me to believe there's not much left for the bugs to munch on.
