Once your ground water gets too warm it doesn't matter how many plates you have. Next brew day I'm going to have to get out the old immersion chiller to use as a pre-chiller.

Last fall I did a 14x20 deck with the PVC decking material. The stuff is a bit expensive ($42 for 5"x16'), but I can clean it with a mop :)

I'm usually in the 4 - 4.5 hour range on brew day. It takes me about 30-45 minutes the night before to get everything ready.

The other option is where the compress hump is. That's *usually* just a piece of sheet metal with nothing in it. If it's not insulated it should be fine to drill a small hole through.
