If the color you want is very very light.... then I would suggest going for a "lite" style beer, usine Rice Syrup Solids instead of Malt Extract....

I made a batch for my wife, I prefer the dark...

Just as a follow up... late last week I moved the Brown Ale from Primary to secondary. I used a sanitized wire hanger to "retrieve" the cork. No problems. ...

I had heard that ale yeast can be sluggish in cider, that's why I used the yeast nutrient... I am hoping that would speed it up a little? am I wrong in that assumption?

EXACTLY... hence the nickname for some brewers being "Hopheads" I like some hops, but not too much... A little sweet aint tooo shabby for me.

As for the coopers ale, I went with it quite simply because the owner of my HBS said that the ale yeast wouldn't tear...

Ditto... just bottled a SNPA clone myself... just had to be extra carefull in racking to the bottling bucket, then in bottling.

One thing I did do, I did let the beer sit in the bottling bucket...
